Engine temperature reads low

I took the T out for a spin yesterday and l notice that the water temp never got above 140*. My engine is a 350 small block Chevy.

I always thought that if the sensor fails there would be no reading. Am I correct?

Tried to do some research on line and found the room temperature resistance on the sensor should be 2000 ohms. I am on my way to check that now. If this is correct, what should the ohms read at operating temperature?

Not sure about which way a sensor goes when it fails.

I had to replace my Flexalite sensor mine back in 2014. So for reference I measured the new one.

061° F – 14.75 KΩ
100° F – 5.6 KΩ
110° F – 4.4 KΩ
120° F – 3.6 KΩ
150° F – 2.0 KΩ
180° F – 930 Ω

Per the internet mine should be 2000 at room temp. Mine checked 800. I think that I will go to Auto-zone and see if I can measure a new one!
